No matter where you are or how you celebrate, the holidays are a time filled with the shared experience of the foods that are part of our unique traditions. It’s those holiday meals and baking that inspired this year’s holiday video.

Sharing one of our seasonal delights
For many teams in our office in Kitchener, Canada, the holidays are a time to share our favorite cookies, especially gingerbread.
As a festive special, we’re sharing one of our cookie recipes with you. While we usually use traditional shapes like gingerbread men, this year we’re planning to make gingerbread projectors. You can join us and make your own!
Gingerbread projector recipe:

- Ingredients:
- 5 cups (g) all-purpose flour
- 1 teaspoon baking soda
- 1 cup (227 g) unsalted butter, room temperature
- 1 cup (213 g) dark-brown sugar, packed
- 3 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- ¼ teaspoons ground cloves
- 1 teaspoon salt
- 1 large egg, beaten
- 1 cup (250 mL) molasses
- Directions:
- Mix and sift the dry ingredients into a large bowl. Set aside.
- Cream the butter and sugar until light and fluffy using a paddle attachment on a mixer. Mix in the beaten egg and molasses.
- Add the dry ingredients to the butter and sugar mixture gradually on low speed until combined. Don’t overwork the dough as you combine the ingredients. It should still be sticky when combined.
- Divide the dough into thirds and wrap each piece of dough in plastic wrap. Chill the dough for 1–3 hours.
- Preheat the oven to 350 F (177 C) and line your baking sheets with parchment paper or nonstick baking mats. Set your baking sheets aside.
- Once chilled, remove a disc of chilled cookie dough and place it on a floured work surface, and roll it out until it’s about 1/4″ (6.5 mm) thick.
- Using a rectangular cookie cutter, cut out your shapes. You can get creative and add feet to your projectors by adding a small amount of dough to the bottom of the shapes. If you want to cut them out to scale, we’ve got you. Check out our projector list below.
- Transfer the shapes to your baking sheet and place baking sheet in the fridge to chill until firm (about 10 minutes).
- Bake the cookies for 10–14 minutes, depending on your cookie size. They should look crisp, but not dark. Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack.
Gingerbread cookie decorating
Once your cookies have cooled completely, fill a piping bag with royal icing. Using a small round piping tip, you can create your own festive projectors for a bright holiday season.
Royal icing recipe
- Ingredients:
- 3 egg whites
- 2–3 cups icing sugar, sifted
- 1 tablespoon of lemon juice or ¼ teaspoon of cream of tartar
- Directions:
- Put egg whites in a large bowl and add 2 tablespoons of icing sugar. Beat the egg whites for about three minutes using a fork or whisk. Continue to add icing sugar by the spoonful and add in the lemon juice or cream of tartar as the mixture starts to thicken.
- You can add more icing sugar than the recipe calls for to get your desired thickness for piping.

We’re using approximately a 1:6 scale to make our cookie-sized projectors. So, grab your ruler and start cutting out your projection cookies for the season!

For our more compact cookies that pack big flavor, like our Jazz or M 4K RGB Series, you’ll need a slightly shorter baking time.
